What to do with the extra Easter Eggs....

Egg Salad

1 boiled egg
4 Boiled egg whites
1 TB light miracle whip
2 TB mustard
2 TB chopped green onions
salt & pepper to your liking

Chop and mix together. Eat it as a salad and dip crackers or veggies into it. Or put it on an Ezekiel 6in tortilla for a wrap.
